For the Coffee lovers - Coffee flavored cupcakes !

 Let's change for a while the crafts making with sweets making. Last Saturday I woke up craving something sweet that will go perfectly with my cup of coffee. So, while still in bed I imagined a moist coffee flavored cupcake topped with my favorite meringue cream. And not only I was craving for the cupcakes, but also I wanted to try my new Wilton 1M open star decorating tip plus this wonderful tutorial I saw on CakeJournal.com.


Recipe
( makes 18 medium cupcakes )
For the cupcakes:

1 cups butter
1 cups strong coffee
1/2 - 1 Tablespoon instant coffee

2 cups all-purpose flour
1/2 cup sugar
2 eggs, beaten
1/2 cup sour cream
1 Tablespoon vanilla extract
1 teaspoons salt
1/2 teaspoon baking soda

Directions:

Preheat oven to 350º Fahrenheit, 180ºCelsius. In a large saucepan bring the butter, coffee and instant coffee to a boil. Remove from heat and add sugar, stir it till dissolved, then add sour cream, eggs and extracts. Stir until well combined. Add the flour, salt and baking soda then stir until well mixed.


Pour the batter into muffin tins lined with cupcake wrappers. Bake for 18-22 minutes, or until a toothpick inserted into the middle of a cupcake comes out clean.
Cool cupcakes on wire racks.

For the frosting:

For the frosting you have two options.You can use egg whites or meringue powder.

Meringue powder frosting

2 Tablespoons meringue powder
4 Tablespoons water
1/2 cup sugar
1 Tablespoon lemon juice
2 - 3 Tablespoons water
1 Tablespoon instant coffee ( optional )

1. Beat the meringue powder with 4 Tspoons of water until stiff peaks.
2. In a small saucepan mix the sugar, the lemon juice, 2 - 3 Tspoons of water and the instant coffee ( if used ). Turn on the heat and mix until the sugar is totally dissolved and the mixture has a consistency  of sugar syrup.
3. With the mixer on you start pouring the sugar syrup into the meringue mixture.Again, beat until stiff peaks form.  

Egg whites frosting

2 egg whites
1/2 cup sugar
1 Tablespoon lemon juice
2 - 3 Tablespoons water
1 Tablespoon instant coffee ( optional )
Beat the egg whites until fluffy and stiff peaks. Then repeat step 2 and 3 from the meringue frosting instructions. 


And now you can make your favorite coffee or cappuccino and enjoy it with these flavorful cupcakes.
