Easter Cookies - Brownie Roll - Out Cookies

That's the first time I use this recipe, and definitely not the last. I'm putting them into my favorite roll - out cookies. I loved them because they are easy to make, easy to roll and bake and the taste is great.If you want them to be more like a brownie you have to roll the dough thicker than the usual sugar cookies.

Ingredients :

3 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1 cup butter, softened
1 1/2 cups sugar
2 large eggs
1 teaspoon vanilla extract
2/3 cup unsweetened cocoa 

Directions :

Preheat oven at 350 degrees. Mix the flour, baking soda and salt. Mix butter, sugar, eggs, vanilla and cocoa with a mixer. Gradually add flour mixture, and mix until smooth. Wrap in plastic and chill for at least one hour.

Roll out cookie dough on floured counter and cut into desired shapes. Bake on a parchment-lined baking sheet for 8 to 11 minutes or until the edges are firm and the centers are slightly soft and puffed.

For the Royal Icing :

3 Tablespoon meringue powder

4 cups powdered sugar

6 Tablespoon water

1 teaspoon vanilla extract 

Beat all ingredients together until stiff peaks form (about 10 minutes). To vary the consistency, add water to thin and  powdered sugar to thicken. It is preferable to use gel color for the icing because they will not change the consistency of the RI and  the colors are more intense  and bright. For the piping I used zip lock bags with  piping tip number 1.

The combination between the cookie and the icing is yummy !
