( makes around 80 assembled cookies)
I'm giving you the ingredients for the original recipe, but for this post I baked half of it, which gave me 40 cookies .
For the cookies
2 cups icing sugar
1 cup vegetable oil
3/4 cup yogurt
350º Fahrenheit, 180º Celsius. Add the remaining cup of flour in to the batter and knead it. Prepare baking pan lined with parchment paper and with your fingers start forming balls with the size of a small sized walnut. Arrange them on the baking sheet ( 1/2 inch apart from each other ) and bake for 11 - 18 min or until the bottoms become golden. Very important : the cookies have to stay white ! ( I wasn't careful and burned some of mine ! )
Cool each batch and with a small knife start coring the cookies on the bottom part, so you have where to place the filling. Keep the crumbs for the filling.
Mix the ingredients for the filling you choose, fill the cored cookies and glue together.
For coloring you will need two separate bowls filled with around one cup of milk or water, and food coloring - red and yellow. Depending on how many drops you put, color of the peaches will be different.
Then you take a cookie and dip half of it in the red color and the other half in the yellow and roll it in sugar. And there you go - you have a peach.
Put the cookies in air tight container or a zip-lock bag and let them stay there at least 12 hours.

May be from my long post it looks like the peaches are difficult to make, but in real it is easy and definitely it is worth !
