Oatmeal Coconut Chocolate Chip Cookies / Овесно - кокосови сладки с парченца шоколад

These cookies are our all time favorite quick cookies! Every time we crave something sweet, when it's too late for complicated recipes, or when friends call and say they are coming in an hour for a coffee I bake these cookies. I love them because they are quick to do, and I don't have to take out my mixer.
May be you wonder, why I kept the recipe from you for so long?! The answer is simple. I usually bake them late at night, or just before someone comes over and until I'm ready to take a picture, the cookies are no longer existent. But this time I decided to bake them especially for you!

First Birthday and Easy Lemon Tartlets / Първи Рожден Ден и Лесни Лимонови Тарталети

Today my little virtual kingdom is turning one! When I started this blog I never thought it will become such a big part of my life. I'm not proud to admit but I'm one of those people who start things that they never finish. I get excited pretty easily and once I see that I'm capable of doing what I'm doing the excitement flies away. So, Byby's Kingdom is a really good surprise for me. It showed me that I can keep things up and I can be steady. I learned that I can be very organized and persistent, two qualities I thought I was missing by nature. I know that I have a lot more to learn but all the little steps I made past year are making me very happy and very proud of myself.
Another thing that Byby's Kingdom gave me is the chance to meet so many wonderful people with similar interests. It's been a real pleasure to read all your comments and to see my crafts or recipes featured at your blogs. Thanks to you I know that what I do matters and makes me even more determined to continue. Thank you very much for sharing your time with me!
And because it's a birthday there must be a candle and something to put the candle on. I didn't have the time for a big birthday cake, but I made something that was on my to try list for quite some time - Lemon Tartlets...

Rice crusted quiche with broccoli and feta cheese / Киш с броколи и сирене върху оризова кора

Hi everyone! I know it's been a week since I posted for the last time, but I've told you already, when the weather is nice, you can find me outside of the house. And this last week, here in Montreal we had summer in the middle of March. I'm talking about real summer with temperatures between 20 - 30°C, sleeping with open windows and taking out summer clothes and flip flops. It was sooo great! Unfortunately from today we are back to normal march weather - cold and rainy.
The good thing about the cold days is that they turn my desire for baking on. So, I have something baked for you today - Rice crusted quiche with broccoli and feta cheese.

Baked Banana Donuts / Печени бананови понички

I was looking for the perfect baked donuts recipe for forever and I have to admit I almost gave up...until the other day when I saw Haniela's Baked Shamrock Donuts. At first I was skeptical due to my previous experiences but this time everything turned out great. Thank you Haniela for the great recipe.
She made her donuts in the shape of shamrocks for St. Patrick day, but I decided to keep it simple and cut them the old fashion way. The only difference is that mine are mini donuts, as almost everything I cook and bake recently.
If you look back at my publications, you'll see so many post titles starting with mini something. It's may be some kind of obsession, but the first think I imagine when I see a new recipe is how it will turn if I make a mini version of it. I know it sounds a little bit crazy, but what can I do when I'm in love with mini things.:) May be I have to change my blog's name to Byby's Mini Kingdom...

Brown Rice Cakes / Кюфтенца с кафяв ориз

Today I want to share with you an easy and healthy recipe for brown rice cakes. Actually I used the Lundberg Wild Blend which is a gourmet blend of wild rice and whole grain brown rice. The mix includes long grain brown rice, sweet brown rice, wild rice, whole grain Wehani®rice, whole grain Black Japonica rice. This blend will not only keep you on the healthier side, but it will touch all your taste sensors. It has an amazing flavor, chewy and colorful texture and rich nut - like aroma. So far this is our favorite rice mix!
Even if you can't find this exact company wild blend I suggest you try any similar mix, because the taste is much better. Of course the cakes are perfectly good with just brown rice, so it is your choice.

Nut - staffed Chicken Breasts with Creamy Gravy / Пилешки гърди с фъстъчен пълнеж и млечен сос

Hi, everyone! I hope you had a great weekend. As I told you in some of my previous posts the winter here can be annoying and long, so the first days of sunshine and clear skies are really appreciated. Like the last 4 - 5 days, we had our first really nice and sunny days. Temperatures were on the plus side and birds started singing and what I love the most is the warmth of the spring sun. I don't know if it's just me, but when the first signs of spring start showing I find it very difficult to make myself stay inside. I'm all about going out for a coffee, a simple walk or just stay on my balcony with cup of coffee and a magazine, taking all the sun I can. And by doing so, my list of thinks to do, recipes and crafts waiting to be shared with you starts growing very fast.
Five days after I made these chicken rolls I finally managed to sit in front of my laptop and write this post.

Cappuccino Pancakes with Mocha Syrup / Капучинови палачинки с мока сироп

Hi everyone! Do like drinking coffee? I love coffee and I love the aroma that fills the house early in the morning. That's why when I saw the picture posted on Greedy Gourmand's Sunday Salivation I knew we are having those cappuccino pancakes for breakfast. Of course, not without the mocha syrup, which will be surely very good addition not only for pancakes, but also for ice cream or cupcakes.
Well the only down side of the recipe is that it's not kids friendly with all the coffee in it. However it is a great breakfast for grownups!

Celery and octopus salad / Салата от селъри и октопод

This year we did'n have the usual Canadian cold winter with mind freezing colds and mountains of snow. On one hand that's great, because I'm not a cold weather person but I'm also thinking isn't it some kind of a warning from mother nature...I don't know. What I know is that even if the winter was nice and warm it takes too long here in Montreal. I'm starting to feel the winter blues and I catch myself more and more dreaming about green grass and blooming trees. My eyes hurt from the gray colors surrounding me, so I decided to give them a little treat by making a fresh green salad with Mediterranean touches.

Mini Strawberry Cakes / Мини ягодови тортички

Today's post is dedicated to a centuries - old Bulgarian tradition. On the 1st of March we celebrate "Baba Marta" (Grandmother March ) holiday. Grandma March is a mythical figure that symbolizes the end of cold winter days and the beginning of spring. According to the believe, Grandma March is an old woman, known for her changing moods and unstable character as the month she is symbol of. One day it can be nice, warm and sunny  ( that's when she smiles ) and the other snow storm may come along. Typical woman, right?:) We pay tribute to Baba Marta by tying red and white woven threads  called "martenitsa" around our wrists. There are many legends and tales about what "martenitsa" stays for. What I was said when I was little is that white color is  symbol of purity and new beginning and red is the color of health and also keeps away bad eyes and mystical creatures. So, when my mom was tying the two colored bracelet on my wrist every year on the 1st of March she would say " Be white and pure as the white of this martenitsa, and let your cheeks be red and bright as the red string ..." The "martenitsas" are worn until the first signs of spring arrive. Some people will take it of and tie it on the first blooming tree they see, others wait for the arrival of the first spring birds as storks, swallows etc. and they place their "martenitsas" under a big stone.
I'm telling you all that just because I don't want you to wonder why is so red and white today in my blog.
