Belgian Tuile Cookies with Raspberry - Ricotta filling /

Hi, Everyone! I was right when I guessed yesterday that combining ricotta and raspberries will turn into something delicious. I thought about it when I was making the Sponge Roll with Strawberry - Ricotta filling and I just couldn't wait any longer to try it. The only question I had in my mind was what to fill with it. I wanted it to be something crunchy, sweet and without any strong flavors. I checked my " To Try " recipe list and found the perfect match - Belgian Tuile Cookies. They turned out exactly the way I imagined  - fresh and not too sweet, plus they are eye catching! See it for yourself!

Sponge Roll with Strawberry - Ricotta Filling /

As usual here in Montreal after the long and cold winter, we had like two weeks of spring and than the summer started. From big boots and heavy winter coats we had to switch to flip flops and tank tops, turning off the heating and installing the air conditioning. And the best part of all is that markets are starting to fill up quickly with fresh and delicious fruits and vegetables. For me and may be for all the food bloggers out there this means more fruit desserts, freshly made smoothies and lemonade. And this is what you'll see in my next few posts, starting with one delicious Sponge Roll filled with Creamy Ricotta Cheese and Strawberries.

THE DARING BAKERS' MAY 2012 CHALLENGE - Challah / Предизвикателство за Май 2012 THE DARING BAKERS - Хляб Хала

I'm so happy to share with you my first Daring Bakers' challenge.
May’s Daring Bakers’ Challenge was pretty twisted – Ruth from The Crafts of Mommyhood challenged us to make challah! Using recipes from all over, and tips from “A Taste of Challah,” by Tamar Ansh, she encouraged us to bake beautifully braided breads.
I don't know if it is a coincidence or some kind of a good sign, but my first challenge is about something I love so much, but I was always thinking it's too complicated for me to make. My first encounter with the Challah was when we arrived in Montreal and we were in the search of a bread which is similar to the one we were eating in Bulgaria. That's how I fell in love with the famous Jewish bread.
I know my Challah is not perfect, but at least now I know I can make it and it's not as complicated as it seemed before.

Green Bean Pancakes /

Lately I've lost my desire of eating meat. I don't know if I'm slowly becoming a vegetarian or it is just a phase, but as long as I don feel like eating meat I won't be forcing myself. At this time of year it's not difficult to keep your diet meatless with all the greens, fruits and vegetables on the market, but I get easily tired of eating salads. So, I started looking for interesting vegetarian recipes and I was surprised how many of them are out there just waiting for me to try them. Here comes one of them - Green bean pancakes. I saw the idea at Cannelle et Vanille, which is one of my favorite places on the web, not only because of the great recipes, but also for the beautiful pictures. If you click on the link, you'll see that originally these pancakes were supposed to be made with English peas, but I couldn't find in my nearest fruit and vegetable store, and I was lazy to go to the market, so I decided to try them with green beans. The result was great!
So great, that I made the recipe again on the next day, but instead of pancakes I made patties, which I baked in the oven. Here comes the recipe:

I'm back.../ Тук съм...:)

I'm back from my vacation and trying to catch up on all the great posts I've missed. We had a great time and perfect weather, and coming back to the big city wasn't easy. I have to admit though that this was my first time going on vacation and missing the Internet and mostly my blog and blog friends. I have never thought that the blog will become such a big part of my life.
As thank you for all of you who visit and comment in my blog I have made a small selection of photos from our vacation. I hope you enjoy it!

Lemon Mousse for “Get Your Chef On” Challenge / Лимонов Мус за предизвикателството “Get Your Chef On”

Hi Everyone! Right now we are spending our vacation in our favorite lake house. There is no Internet or cell phone reception so I'm using the free internet offered in the nearest grocery store. That's why I'll jump right on the subject of my post.
A month ago I signed in a cooking challenge hosted by Four Marrs and One Venus and White Lights on Wednesday .
The topic is Lemons! I wondered a lot and finally decided to make a Lemon Mousse.
There it is:

Bread Machine Pizza Dough /

I'm already set on vacation mode and my desires to cook and bake are not on their highest but we still have to eat something. Here comes the help of the bread machine, BBQ and all the things that make cooking simple, yet delicious.
What I'm showing you today is not what an Italian will call a pizza, but that's how we like it and make it, plus we are Bulgarians, so I hope we'll be excused for messing up with world famous Italian Pizza!
The recipe I use for my pizza dough is really simple and I never had a problem with it. As for the toppings - they change every time depending on what we have in the fridge.
