I love eating desserts in all forms, shapes and flavors. If you ask me which is my favorite I won't be able to tell, but eclairs are definitely in my top 10 list. They always bring memories from my childhood when on the way back home from kindergarten we used to stop at the nearest pastry shop for something sweet. My usual choice was a big eclair fully stuffed with pastry cream and frosted with chocolate...yum, yum!
It took me years to try and make eclairs at home. I was always thinking that it is very complicated and you need at least one pastry school diploma to succeed in baking a nice eclair.
But finally somehow I swallowed my fear and gave it a try... and it was a big success! From my first try till now I've made eclairs many times without a problem. However I have to admit it's a little bit time consuming with all the mixing, piping, baking than again the same actions for the cream ... and once served the eclairs have the tendency to disappear very quickly. That's why I don't make eclairs very often but I was very happy when I saw this month Daring Baker challenge!
Kat of The Bobwhites was our August 2012 Daring Baker hostess who inspired us to have fun in creating pate a choux shapes, filled with crème patisserie or Chantilly cream. We were encouraged to create swans or any shape we wanted and to go crazy with filling flavors allowing our creativity to go wild!

Today's recipe is for super moist and delicious pancakes topped with sauteed bananas. It is the perfect weekend breakfast, because it takes more time than an usual pancake recipe, but I promise, those pancakes are very yummy! I don't know if it is because of the sauteed bananas or the melted chocolate pieces but they are one of the most delicious pancakes I've tasted. I'll be making them again and again!

I made these yummy cupcakes may be a month ago, but due to our vacation and my laziness I'm sharing them with you now. I've been pinning many zucchini cupcake recipes but the recipe I used won over all the others, because it doesn't use butter, it is egg-free and dairy-free. All that makes it suitable for people with dairy or egg allergies and is a perfect treat for vegans and vegetarians.

Lately I've been trying a lot of raw recipes, not because I'm switching to raw eating, but out of curiosity and because of the hot weather. And of course it is always nice to spoil yourself with guilt free dessert. I have to admit that with every raw recipe I try the whole idea is very quickly starting to grow on me. I'm not sure if we'll be able to become total raw eaters but I'll definitely include more and more raw recipes to our menu. It's healthy, it's easy, it's delicious, so there is nothing to lose. Let's go the recipe part!
